Unique dining and entertainment options in Downtown Bellevue continue to expand. What attracts restaurateurs to our city? We recently caught up with Dan Thiessen, owner and chef of the recently opened 0/8 Seafood Grill and Twisted Cork Wine Bar.

Here’s what Dan had to say.

Why Downtown Bellevue?

“We recognized a need and opportunity. When we started the process of developing a restaurant and bar concept for Downtown Bellevue, we made a list of every-thing that our guests wanted. That is how the concept for 0/8 Seafood Grill and Twisted Cork Wine Bar evolved. A locally-owned, chef-driven concept on Bellevue Way with extensive wine and champagnes by the glass or taste, one-of-a-kind live entertainment, 20 small plates to share as appetizers, private dining for up to 110, and an ever changing market sheet.”

What makes the experience at your restaurant unique?

“The most striking element of our restaurant is the design, décor and layout. We feature several interesting elements within the space to suit guests’ needs and whims. Our unique elevated champagne lounge is an area to relax and enjoy the view of the bar and lounge in a quiet environment. You can also sit at the Expo kitchen and watch the cooks prepare our appetizers. The main dining room has elevated booths that make a great meeting space for breakfast, lunch or dinner. The upper dining room allows the guests to sit street-side for a view of the action outside.”

What is your vision for the restaurant?

“It’s the opportunity to provide Bellevue with a great food and wine experience, one that offers a unique and fresh taste.”
