SHARES SIGNATURE RECIPES
The
24th Trader Vic’s restaurant opened in Downtown Bellevue just
over a year ago. Megan Fricke, Trader Vic’s marketing director,
shared some of the history of Trader Vic’s dating back 65 years.
Victor Bergeron (the Trader Vic) opened his first restaurant, Hinky
Dink’s, in Oakland in 1932. It was a cozy pub that soon became
a Bay-area hot spot thanks in part to Vic’s take on Polynesian
cuisine and his potent and popular cocktails. By 1936, what was known
as Bergeron’s Hinky Dink’s had become Trader Vic’s.
Since the early days, people around the world have fallen into the mystique
of Trader Vic’s legend. The restaurant’s recipes –
for both the food and the cocktails – reflect the founder’s
personality: distinctive, light-hearted and impressive.
Now you can bring a taste of Trader Vic’s into your home. Try
these two legendary recipes.
Trader Vic’s Scorpion Signature Cocktail
1 1/2 oz. Trader Vic’s Orgeat Syrup
6 oz. orange juice
4 oz. lemon juice
6 oz. light Puerto Rican rum
1 oz. brandy
Blend in electric drink mixer with 2 scoops shaved ice. Pour into large scorpion bowl. Fill with ice cubes. Decorate with a gardenia. Serves 3 to 4.
Trader Vic’s Hawaiian Chicken Salad
1 cooked chicken breast, diced
1/2 cup celery, peeled and diced
3 tbsp mayonnaise
Salt and pepper to taste
Fruit to be arranged on plate over 2 oz. of shredded lettuce:
3 slices of pineapple, papaya, honeydew, orange, grapefruit and strawberry.
Honey Lemon Dressing:
1 tbsp honey
1 tsp lemon juice
4 oz. water
Mix chicken, celery, mayonnaise and salt and pepper together lightly.
Place shredded lettuce on salad plate, place chicken mixture in center
and place fruit around chicken mixture. Mix ingredients for dressing
and serve on the side.
